4oz cheddar cheese 3oz self-raising flour 2 eggs 1/2 pt. milk 1/2 tsp. French mustard Pepper to taste
- Grate cheese into a bowl
- Add flour, egg yolks, seasoning.and milk. Mix all together to make a thickish batter.
- Whisk egg whites until stiff, then fold into mixture
- Heat pan with a little hot oil
- Add 1 tablespoon mix to pan per puff (2-3 per pan), brown and turn.
