Cheese Puffs

4oz cheddar cheese
3oz self-raising flour
2 eggs
1/2 pt. milk
1/2 tsp. French mustard
Pepper to taste
  1. Grate cheese into a bowl
  2. Add flour, egg yolks, seasoning.and milk. Mix all together to make a thickish batter.
  3. Whisk egg whites until stiff, then fold into mixture
  4. Heat pan with a little hot oil
  5. Add 1 tablespoon mix to pan per puff (2-3 per pan), brown and turn.
